June’s dinner will focus on the bold flavors of ripe, in-season vegetables and fruits such as berries, apricots, cherries, peppers, sunburst squash, new potatoes, and avocados. Dishes will also include the essential tastes of summer with sweet herbs and hardy chives. A summer solstice celebration dinner would not be complete without staples from the grill like tender, fleshy artichoke hearts and wild king salmon. Chef Ian will also feature the rich umami of anchovies and sardines.
