
Mohr Fry Ranch Heirloom Bean Salad, Grimaud
Farm Smoked Duck Breast,
Muscat Vinaigrette
INGREDIENTS:
3 cups cooked Jacob Cattle beans Morh Fry Ranch
TOLEDO FARM PRODUCE
2 bell pepper, chopped small
1 sweet white onion, thinly sliced & pickled
1/2 small red onion, julienned small
3/4 cup roasted Piquillos pepper, diced
2 green onion chopped
1 heirloom tomato peeled seeded
1/2 smoked hen duck breast GRIMAUD FARM
MUSCAT VINAIGRETTE
1/4 cup Muscat vinegar
1/4 to 1/2 teaspoons Basil
2 tablespoons olive oil
Salt and pimenton to taste
In a large bowl, whisk together vinaigrette ingredients, except for olive oil. Add olive oil in a steady stream while continuing to whisk to emulsify dressing. Add remaining salad ingredients, Cover and set aside for at least one hour. Taste before serving to check for seasoning, adding more vinegar, salt and/or pepper as needed.
